Step 1
Black pork ribs are hereafter referred to as ribsStep 2
Take out the ribs and defrost them in advance. Add a handful of flour to the ribs and rub them into the ribs, then rinse them several times with running water.Step 3
Add purified water to the pork ribs pot and boil to skim off the blood foam, remove the pork ribs and drain the water. The water for blanching the pork ribs will be clarified and set aside for later use.Step 4
Boil the oil, add the seasonings, chopped diced cloves, peppercorns and white peppercorns, turn to low heat and fry until brown and fragrant, put into the seasoning box and set aside.Step 5
Put the seasoning box into the ribs pot, take out the seasoning oil, add ginger slices, garlic slices and green onions and stir-fry until fragrant. Add the ribs and rock sugar, fry the ribs until yellow, add cooking wine and light soy sauce and stir-fry.Step 6
Add clear water to the fried pork ribs, submerge the pork ribs, bring to a boil and simmer for 1 hour and 20 minutes.Step 7
Slice the lotus root, cut the onion into triangles, and cut the potatoes and carrots into cubes (note: the potatoes purchased online from Dingxi, Gansu Province taste great)Step 8
Take another pot, add the soup used to stew the pork ribs, add the lotus root slices and simmer for 15 minutes.Step 9

Add the soaked white fungus (note: my children like to eat white fungus and usually don’t add white fungus)Step 12
Pour the ribs into the pot, add the curry cubes and simmer over high heat for 4 minutes. Finally add the onions and simmer for half a minute. Sprinkle a little Totole chicken essence and stir well. Enjoy as shown in the first picture. Curry pork ribs cooking tipsNo salt is added when making curry pork ribs, the curry cubes are salty enough. Black pork ribs are stewed for 90 minutes, and regular pork ribs are stewed for 50 minutes. Now that the weather is cold, the curry pork chops are ready. Place the stove ring on the dining table and put the pot on it to enjoy hot. You can eat rice or steamed buns as the staple food (see the first picture).
