French Cream of Mushroom Soup
Ingredients
- A simple white sauce material:
- Butter 50g
- Low gluten flour 40g
- Fresh milk 500cc
- Salt 1/8 tsp
- Black pepper 1/8 tsp
- Granulated sugar 1/4 tsp
- B soup material:
- Linseed oil (or olive oil) 1 tablespoon
- White Mushroom 330g
- Onions 40g
- Garlic granules 15g
- Butter 15g
- White Sauce 100g
- 清水 400cc
- Fresh milk 100cc
- Blanc Blanc (or white wine) 10cc
- Thyme Appropriate amount
Steps
1. Make white sauce: put butter + low powder into a bowl, heat in microwave for 1 minute
2. Stir evenly into a paste
3. Pour fresh milk into step 2
4. Put it in the microwave for 3 minutes, then stir quickly to mix
5. Add all the white sauce seasonings, microwave for 2 minutes, mix well again and set aside
6. Wash the mushrooms, dry them and slice them
7. Cut onions into thin strips
8. Slice garlic,
9. After the three are completed, stir-fry over medium-low heat for about 1 minute
10. Then add linseed oil, stir-fry over low heat until the material softens and the volume is significantly reduced
11. Take a soup pot, boil water and add the mushroom ingredients in step 10
12. Mix the white sauce and bring to a boil, then turn off the heat and add fresh milk
13. Use a hand blender (or pour into a wall breaker) to beat all the ingredients into a thick soup without particles
14. Take another soup pot and add butter + wine
15. After melting over low heat, pour the whipped soup into the pot
16. Simmer over medium-low heat until it boils, stirring while cooking. Add seasonings such as salt or pepper if you like
17. After boiling, add thyme (or chopped coriander) and complete
