Sticky Rice Rolls with Pumpkin Bean Paste
Ingredients
- Pumpkin 200g
- Glutinous rice flour 150g
- Red bean paste 120g
- Coconut 40g
Steps
1. Choose an old pumpkin, the old pumpkin tastes sweeter
2. Prepare other ingredients
3. Cut the pumpkin in half and remove the skin
4. Remove the sac inside the pumpkin
5. Cut the pumpkin into thin slices
6. Put the pumpkin into the steamer
7. Steam until it can be lightly crushed with a spoon. Use a spoon to crush the pumpkin into a puree and let it cool for later use
8. Add glutinous rice flour to the pumpkin puree, mix well, and slowly knead it into a non-stick dough; (If you have glutinous rice and a flour machine, you can directly use glutinous rice to flour it, as the flour you grind by yourself will be rough. For a moment, buy ready-made glutinous rice flour to make it more delicate)
9. Place a piece of plastic wrap on the chopping board and roll the dough into a rectangular shape
10. Cut off the edges with a knife to make the dough more regular
11. Spread bean paste evenly in the middle
12. Spread a thin layer, leaving a little margin at the edge
13. Then roll it up like sushi
14. Rolled up
15. Pour water into the steamer and bring it to steam, then use a steamer to steam the pumpkin rolls (about 20 minutes, you need to place a piece of baking paper at the bottom to prevent sticking);
16. After steaming, remove the lid, let it cool slightly, and carefully move the pumpkin rolls to a plate covered with coconut mash, roll it a few times to evenly coat the surface with coconut mash
17. You can also use icing sugar instead of coconut according to your own taste
18. Finally cut into small pieces
19. It will be soft when you first pick it up. It doesn’t matter. It will take shape after it is cut and cooled
20. If you like sweet food, you can add a little sugar when kneading the dough.
Tips
- The different moisture content of the pumpkin puree will affect the amount of glutinous rice flour. Please adjust it according to the actual situation. You can also use a microwave oven to slightly cook the pumpkin pieces. This will prevent you from introducing extra moisture into the pumpkin puree.
