Avocado Shrimp Beet Rice Balls

Step 1
Peel and cut the beets into small pieces, steam them in a pressure cooker until soft (turn on the heat and turn off the heat for about 18 minutes); peel and core the semi-ripe avocados; remove the heads, shells and intestines of the shrimps.Step 2
Puree the steamed beets; add sushi vinegar to the hot rice and mix well, then add three tablespoons of beet puree and mix well, cool and set aside; toast the sesame seeds in the oven until fragrant.Step 3
Place the avocado slices in boiling water for 10 seconds, drain immediately and place in cold boiled water to cool.Step 4
Add some salt to the water in which the avocados were cooked. Cook the shrimps in boiling water, but don't overcook them! Pick up the shrimps immediately after they turn white.Step 5
Place 1/3 of the beet rice in the rice ball mold, with the middle lower than the three sides. Add shrimp and a squeeze of salad dressing. Cut avocado into small pieces.Step 6
Add avocado and squeeze a little more into the salad. (If you don’t have a mold, you can knead it with your hands. Before kneading, apply some cold water on your hands to prevent sticking, but the shape is still not as correct as the mold!)Step 7
Cover with an equal amount of beet rice as the bottom layer, press tightly, unmold, and attach a piece of nori.Step 8
