Find the bunny in the chili pepper
Rabbit Meat 500g/1 piece | Cooking wine 2-3 spoons |
Pepper 1 scoop | Chili sauce (optional) 1 scoop |
Starch 1 scoop | rapeseed oil 2 scoops |
Dried chili 1 handful (about the same volume as rabbit meat) | Zanthoxylum bungeanum (green and red are acceptable) 1 small handful |
Tangerine peel 1 block | Cinnamon 1 block |
Star anise 1 | Ginger/Sannat A few slices |
Fragrant leaves 2-3 tablets | dried onions 2 |
Garlic1 head | Hangzhou pepper (optional) 2 items |
Cooked white sesame seeds Appropriate amount | Light soy sauce 2 scoops |
Old soy sauce 1 scoop | White sugar 1 scoop |
Salt 1 scoop |
Step 1
Marinate the rabbit first. The rabbit meat I use is boneless, or it can be bone-in, but it needs to be processed into small pieces, 2-3 cm in size. Add pepper, cooking wine, chili sauce and mix well. Add another spoonful of starch, mix well, add rapeseed oil, seal and marinate for more than 1 hour.Step 2
Cut the dried chilies into small pieces and be sure to soak them in water, otherwise they will fry! My chili is not too spicy, so I add more. If you don’t want to eat rabbits in the chili, use hot chili peppers!Step 3
Dried spices must be soaked in water, star anise, peppercorns, tangerine peel, bay leaves, and cinnamon. Other ingredients, chopped shallots, sliced ginger, garlic, and pepper are set aside.Step 4
Put enough rapeseed oil in the pot to cover the rabbit meat, don't be afraid of too much oil! Trust me, put more oil! ! Fry the rabbit meat over medium-low heat, cut and spread the rabbit meat, and when it is five or six times cooked, you can add all the spices except the chili pepper.Step 5
Fry until the rabbit meat is all cooked, add the soaked and drained chili segments, and continue frying! It means frying the moisture out of the rabbit meat and frying it dry!Step 6
Fry the yazi for about ten minutes and add a spoonful of dark soy sauce. I added Hangzhou pepper to make the finished product look better, so you don’t have to add it. Continue to add light soy sauce, salt, sugar and seasoning!Step 7
Finally, sprinkle with sesame seeds, stir-fry and serve! The freshly fried rabbit meat will taste dry because it is fried thoroughly, so be sure to let it soak with the oil for a few hours before eating it.Step 8
This plate looks like a lot! But eating it alone really feels a bit unsatisfactory!Step 9
You can also have more rabbit meat than chili! As long as the chili is hot enough! !Step 10
The two vitex sticks I used for this chili pepper were the only ones left at home, so I added some spicy millet to increase the spiciness!Step 11
If you like the numbing feeling, you can add more Sichuan peppercorns. If you have fresh green Sichuan peppercorns, it will be more fragrant, numbing and refreshing! !Step 12
The fried garlic here is soft and glutinous and very delicious! This plate is really not enough to drink with, hahahaha! Cooking Tips for Finding Bunny in Chili
