Air-dried mutton hot pot
Ingredients
- Air-dried mutton 500g
- Green radish 1 piece
- Onions, ginger and garlic Appropriate amount

Steps
1. Air-dried mutton
2. Chop into large pieces
3. Soak in warm water for 2 hours.
4. Cut ginger, garlic and green onions. There is no need to peel the garlic, just smash it.
5. Green radish, cut into pieces.

7. Add water, pepper, ginger slices and cooking wine to the mutton and bring to a boil.
8. Boil the mutton and rinse it with clean water.
9. Heat the oil in the pot, add ginger, green onions, garlic, spices, and peppercorns, add a small piece of hot pot base, and stir-fry over low heat until fragrant.

19. Add green radish and continue to simmer for 30 minutes.

Tips
- How to make pressure cooker:
- Add water, pepper, ginger and cooking wine to the mutton, boil it and clean it.
- Add water to the mutton and radish, put them in the pressure cooker, and cook for 30 minutes.
