Ingredients

  • High-gluten flour 270g
  • Low gluten flour 30g
  • Brown sugar 60g
  • Hot water 130g
  • Dried blackcurrants 60g
  • Yeast 5g
  • Salt 4g
  • Eggs 1

Steps

Blackcurrant and brown sugar toast (one-time fermentation)

1. Dissolve the brown sugar with hot water and let it cool~

2. Make liquid first and then powder. Do not let the yeast come into direct contact with brown sugar water and salt. Put everything except butter into the bread machine, and the imix function starts kneading the dough. Because flour absorbs water differently, you can sprinkle some flour on it if it is too wet after 5 or 6 minutes. You can add butter in about 10 minutes. Almost two imix functions can be released. If the film does not come out, continue to try another imix. (20 minutes per imix)

3. If the film can be pulled out, it is OK.

4. Divide evenly into 3 portions, knead into a ball, cover with plastic wrap and let rise for 20 minutes (room temperature is about 20 degrees). The awakening time is longer in winter and shortened in summer.

5. After waking up, take out a ball, deflate it, and then use a rolling pin to roll it into an oval shape. If it shrinks as soon as you roll it out, it means it is not yet awake.

13. Serve until 9 points are full and close the lid. If you are not making square toast, there is no need to cover it. Start preheating the oven to 180 degrees.

14. Place in the preheated oven. 180 degrees for upper and lower tubes, 40 minutes. If there is no lid, place it on the lowest floor of the oven and bake for 5-10 minutes while observing the coloring and cover with tin foil to prevent excessive coloring.
