Blueberry Cheesecake
Ingredients
- Oreo cookies 50g
- 20 grams of butter
- Water (jelly) 100 grams
- 20 grams of white sugar (jelly)
- Isinglass powder (jelly) 4 grams
- 150g cream cheese
- 40 grams of fine sugar
- 25 grams of whipping cream
- 1 tsp lemon juice
- 1 tablespoon cornstarch
- 1 egg
- Blueberry jam 30g
- Appropriate amount of blueberries
Steps
1. Mix the isinglass powder and sugar in the jelly, pour it into the water, mix evenly and boil over low heat until it becomes saccharified
2. Let cool, pour into a container, and refrigerate until solidified.
3. Remove the cores of the Oreo cookies and crush them until they are crushed,
4. Pour in melted butter; mix evenly;
5. Pour into a mold lined with paper trays and compact, then refrigerate for later use
6. Heat the cream cheese over water to soften, add sugar and stir evenly;
7. Pour in the egg liquid in batches, mix evenly, add light cream and mix evenly
8. Mix lemon juice and mix well, sift in corn starch and mix well
9. Take a tablespoon of original cheese batter and pour it into the blueberry sauce and mix well;
10. Pour back into the remaining original batter and mix a few times
11. Pour into the mold, about 80% full, and put 4 blueberries on each paper tray
12. Preheat the oven to 180 degrees, pour hot water into the baking pan, put the mold into the baking pan and then put it into the oven, bake for about 35 minutes
Tips
- After baking, do not take it out until it cools naturally; when cool, remove it from the mold and refrigerate for later use.
