Braised eggplant
Ingredients
- Eggplant 400g
- Beef and Mushroom Sauce One tablespoon
- Dried chili 3 pcs
- Water starch A small cup
- Salt One teaspoon
- Fuel consumption 10 grams
- Light soy sauce 10g
- White sugar 10 grams
- Vinegar 10g
- Oil 25g
Steps
1. Prepare materials.
2. Remove the stems from the eggplant and cut into strips
3. Soak the cut eggplants in salt water for five minutes
4. Prepare a spoonful of mushroom beef sauce and chopped dried chili.
5. Wash the soaked eggplants with clean water.
6. Boil 500 grams of water in a pot.
7. After the water boils, add the eggplant and a little vinegar.
8. After blanching, drain out the water.
9. Prepare the water starch.
10. Heat oil in a hot pan, add beef sauce and stir-fry until fragrant.
11. Add eggplant and stir-fry.
12. Stir well and add chopped dried chili pepper.
13. Add sugar, salt, light soy sauce and oyster sauce.

Tips
- Blanching the eggplant is for better stir-frying and better flavor. The eggplant made using this method is not very greasy, but very fragrant.
