Braised mutton pot
Ingredients
- Lamb chops 1000g
- White radish 1 root
- Potato 1
- Onions 1
- Cooking wine 30g
- Light soy sauce 40g
- 老草 10g
- Rock sugar 6 capsules
- Soybean paste 15g
- Onions, ginger and garlic Appropriate amount
- Eight anise 2 pcs
- Cinnamon 2 sections
- 豆宼 1
- Zanthoxylum bungeanum 2g
- Salt 4g
Steps
1. Cover the mutton with cold water
2. 葱 姜放入
3. Cover and blanch
4. After the water boils, remove the onion and ginger, remove the mutton, wash it, drain the water and set aside
5. Cut radish, potato and onion into cubes
6. Slice onion, ginger and garlic
7. 起锅入油
8. Stir-fry onion, ginger and garlic
9. Add star anise, cinnamon and bean paste and stir-fry
10. Add a spoonful of Pixian bean paste and stir-fry the red oil
11. Add the blanched mutton
12. 翻炒均匀
13. Add cooking wine, light soy sauce and dark soy sauce and stir-fry evenly
14. Submerge the mutton with plenty of boiling water
15. Add rock sugar, soybean paste, pepper and onion
16. Cover and bring to a boil over high heat, then simmer over low heat for 40 secondsminutes
17. After 40 minutes, open the lid, add the radish and potatoes, cover and continue to cook over medium-low heat until the potatoes and radish are cooked
18. Add salt to taste before serving

Tips
- 1⃣️ Blanch mutton in cold water
- 2⃣️ Submerge a large amount of boiling water to stew the mutton. Add enough at one time. Do not add water halfway
- 3⃣️Simmer over low heat
