Pour flour, egg whites, salt, sugar, and iced milk into a mixer or basin and mix evenly.Step 2
Knead the dough for about 5 minutes until it is almost smooth! Cover it and put it in the refrigerator to keep fresh for 45 minutes, (refrigeration is not freezing!) 1 hour or more than ten hours is no problem! Or make the noodles at night and do it the next day. This step is the key to getting the membrane out.Step 3
Melt the yeast with 2-3 grams of water and knead until all the dough is dissolved.Step 4
At this point, the dough can already pull out some film. I forgot to add salt in the first step, so it doesn’t matter if I add it in this step.Step 5
Add oil, do not put it in all at once, otherwise it will easily spill out of the bread machine. It is also recommended to put it in three times by hand and mix well! Knead for another 10 minutes or less.Step 6
Grab a piece of dough and carefully stretch it open. If a small smooth opening appears at the thin part, it means it has reached the complete stage and is ready for fermentation.Step 7

Divide the dough into equal sizes, press it into a beef tongue shape, let out all the air, roll it up, and put the edge down.Step 9
Brush the toast pan with oil and place the seam underneath.Step 10
Wrap it in plastic wrap and put it in the oven, it is best if it has a fermentation function. If not, put hot water into the bottom layer of the oven until it doubles in size, then you can start baking.Step 11
