Canadian Arctic Shrimp Stuffed Tomato Slices

Canadian Arctic shrimp comes from the cold and pure 400-meter deep sea of the remote Atlantic and Arctic Oceans. The whole process from catching out of the water, to cooking, to quick freezing and loading into cold storage only takes 60 minutes. Most of the Arctic shrimps purchased in the domestic market are cooked on board, thawed and ready to eat in two sizes: 90-120 and 120-150.Step 2
Prepare the ingredients, peel the Arctic shrimp into shrimps, cut the meat into cubes, and cut the green onion into sections.Step 3
Mince half of the Arctic shrimp with meat, green onion and ginger, leaving half of the shrimp whole.Step 4
Add 1 tsp cornstarch, 2 grams of salt, 1 tbsp oyster sauce, 2 tsp sesame oil to the filling, and use chopsticks to stir in one direction.Step 5
Cut the eggplant into slices diagonally, put a spoonful of meat filling on the eggplant slices, and spread it flat with your hands.Step 6
Embed a whole Arctic shrimp on the meat filling and brush each eggplant slice with oil.Step 7
Place in a preheated 200 degree oven and bake for 15 minutes.Step 8
Mix the chopped pepper and chopped green onion, add cooked white sesame seeds, put it in a small bowl, add about 3 tablespoons of light soy sauce and 2 tablespoons of mature vinegar, and mix well to form a sauce.Step 9
