Colorful Shrimp and Egg Fried Rice
Ingredients
- Overnight leftover rice 250g
- Fresh shrimp 150g
- Bag of peas, carrots and corn kernels 100g
- Soaked black fungus 20g
- Eggs 1
- Oyster Sauce 10ml
- Salt 1 teaspoon
- Cooking wine 1 tablespoon
- Oil Appropriate amount
- Pepper Appropriate amount
- Cooked flour Appropriate amount
Steps
1. Prepare the required ingredients and seasonings.
2. Cut the black fungus into shreds and the green onion into finely chopped pieces.
3. Remove the intestines, heads and shells of fresh shrimps.
4. Marinate the shrimp with a little salt for a while, then rinse away the salt and mucus on the surface of the shrimp with clean water. The shrimp will taste crisper and tender this way.
5. Put the shrimps in a bowl, add cooking wine, pepper, cornstarch and a little salt and marinate for ten minutes.
6. Add a spoonful of salt and a little oil to the water, blanch the diced carrots, peas, corn kernels and black fungus shreds in boiling water, remove and drain and set aside.
7. Blanch the shrimps in hot water until they change color, pick them up quickly, drain and set aside.
8. Heat oil in a pot over medium heat, add rice and stir-fry, use a spatula to make circles in the pot to break up the rice. Do not chop with a spatula, as the rice will be chopped into pieces.
9. Pour the beaten egg liquid evenly into the rice, and stir-fry quickly over high heat to make the egg liquid and rice stick to each other.
10. Pour in the blanched vegetables.
11. Add shrimp and stir-fry evenly.
12. Add salt and oyster sauce and stir well.
13. Sprinkle with chives before turning off the heat.
14. Rich shrimp fried rice is ready.
Tips
- 1. When frying rice, be sure not to cut it with a shovel, otherwise the rice grains will break more. Just use the edge to draw circles in the pot, or use the bottom of a spoon to gently break up the rice.
- 2. Adding some salt and oil when blanching vegetables can keep the original color of the vegetables and ensure that nutrients are not lost.
- 3. Marinate the shrimp with a little salt for a while, then rinse away the salt and mucus on the surface of the shrimp with clean water. The shrimp will taste crisper and tender this way.
