Crispy fried small yellow croaker
Ingredients
- Small yellow croaker 9
- Flour A little
- Onion 2 roots
- Ginger 3 slices
- Salt According to personal taste
- Cooking wine 1 spoon
- Light soy sauce 1 spoon
- Oyster sauce 1 spoon
Steps
1. The small yellow croaker you bought is very fresh. Clean the small yellow croaker and rinse it repeatedly with clean water.
2. Chop the onion and ginger and sprinkle evenly on the fish.
3. Add salt according to personal taste.
4. Add cooking wine, a little more if appropriate, to remove the fishy smell.
5. Add light soy sauce.
6. Cover with plastic wrap and marinate in the refrigerator for 2 hours. (You can also marinate it in the morning before going to work and put it in the refrigerator, and then cook it after get off work)
7. Place the marinated small yellow croaker on a wire rack to dry.
8. Heat the pot and add rapeseed oil.
9. Coat the small yellow croaker evenly with a layer of dry flour.
10. When the oil temperature is 60% hot, go down and wrap the small fish in flour. Remember not to touch it. Fry the fish over high heat first. After the fish is set, turn to low heat and fry slowly.
11. Fry over low heat until golden brown.
12. Pinch out the oil and fry them one by one. (You can make it more complicated so it’s crispier)
13. The small yellow croaker is out of the pot, and the crispy fish bones can be eaten~

Tips
- The fish must be marinated in advance, wrapped in flour and put into the oil pan. Do not touch the fish. Fry it over high heat first. After the fish is set, turn it over. Fry slowly over low heat. The fried fish will be so crispy that even the bones can be eaten.
