Warm water (Material A) 180g | Sugar (Material A) 40g |
Room temperature softened butter (Ingredients A) 40g | Plain flour (ingredient A) 360g |
Cake flour (material B) 100g | Room temperature softened butter (Ingredients B) 100g |
Durian meat (durian filling) 200g | Milk powder (durian filling) 50g |
Step 1
The detailed production process is introduced below First, let’s operate material A Melt 40g sugar in 180g warm waterStep 2
Add 360g of plain flour and 40g of softened butterStep 3
Knead the dough into a uniform dough, then refrigerate for 20 minutes to rest.Step 4
Mix the low-gluten flour and butter in ingredient BStep 5
Stir evenly. It’s not recommended to use your hands because it’s sticky. Use a spoon. Then refrigerate for 20 minutes.Step 6
Peel the durian flesh and mash it with a spoon and add milk powderStep 7
After stirring evenly, the color of the durian should be much lighter and thinner than the original durian.Step 8
Now that ingredients A, B and durian filling are complete, we can start making the durian puff pastry. Be sure to sprinkle the chopping board evenly with flour as the dough will stick easily.Step 9
Roll out the dough slightly into a round shapeStep 10
Pour all ingredients B on top of the dough at onceStep 11
Seal, be sure to seal it tightlyStep 12
Slowly roll out the sauce dough and flatten it, trying not to expose the filling.Step 13
Roll the dough into a larger and rectangular shapeStep 14
Fold the left and right sides toward the middle. This is the first three-foldStep 15
Then slowly roll it outStep 16
Repeat the process of 14 and fold again. This is the second three-fold.Step 17
Roll it out again and flatten it outStep 18
Repeat the process of 16 and perform the last and third three-foldStep 19
This time, roll out the dough flat and thin, preferably into a square rectangle.Step 20
Divide the dough into rectangles with a side length of about 3.4 cmStep 21
Then we can start making durian cakes Pick up a piece of dough and put durian filling in the middle (not too much, otherwise it won’t be covered or it will stretch)Step 22
Seal the dough and press the edges with a fork, so it looks nice and strong.Step 23
Place in a baking pan, spread with egg yolk and sprinkle with black or white sesame seedsStep 24
Bake in the oven at 180 degrees for 25 minutesStep 25
The baked durian cake can be eaten after cooling.Step 26
It will be very crispy when you eat it right away. It will be softer after overnight. I personally prefer it softer because I think the durian flavor is stronger. Durian cake cooking tipsThis durian cake needs to be sealed and kept at room temperature. If there is too much durian filling, you can wrap it in a rectangular shape. You don’t have to make a triangle. Triangles look good, but there is not much filling. This durian cake is only freshly made. It's very crispy, and will tend to have a softer texture after being left for a while~
