Eggplant with minced meat
Ingredients
- Eggplant: 2
- Pork: appropriate amount
- Garlic: half
- Cooking wine: half a spoon
- Pepper: half a spoon
- Cooking flour: 1 spoon
- Light soy sauce: 1 spoon
- White sugar: half a spoon
- Salt: appropriate amount
- Cooking oil: appropriate amount
- (If you like spicy taste, you can add chili oil, bean paste and other seasonings)
Steps
1. Wash two eggplants and set aside.
2. Cut into small pieces of even size.
3. Cut and soak in salt water to prevent discoloration.
4. Chop the minced meat and minced garlic.
5. Marinate the minced meat with half a spoonful of cooking wine, a little pepper, and 1 spoonful of cornstarch for 10 minutes.
6. Drain the water from the eggplant and fry in oil until the eggplant becomes soft.
7. Remove and set aside.
8. Leave a little oil in the pot, sauté the garlic until fragrant, add the minced meat and stir-fry.
9. Add 1 tablespoon of light soy sauce.
10. Half a spoon of sugar.
11. Fry until the minced meat is cooked.
12. Pour in the fried eggplant.
13. Add a little salt and stir-fry evenly. (If you like spicy food, you can add an appropriate amount of chili oil or bean paste)
14. Fry until cooked and serve on a plate.
