Steps
1. Wash the live shrimps with running water and cut off the whiskers
2. Prepare ginger, chopped green onion and green onion segments in a bowl, add 30 ml fresh soy sauce, 15 ml balsamic vinegar, 10 g white sugar and mix thoroughly
3. Marinate the shrimp with cooking wine, green onions and ginger slices for 20 minutes to remove the smell

6. Pour out all the oil, return the shrimp to the pot and pour in the seasoning
7. Stir-fry until all the sauce is mixed with the shrimp, turn off the heat and sprinkle with chopped green onion and serve

- Oil-fried shrimps are not likely to be too big, and smaller ones are more delicious.
