Fun snack: walnut cookies
Ingredients
- Baking soda 1 gram.
- 250 grams of plain flour
- Walnut kernels 80 grams
- 90g soft white sugar
- Sunflower oil 110 grams
- 1 egg
Steps
1. Put the cooked walnut kernels into the food processor. The walnut kernels should be roasted, so that the biscuits will be fragrant.
2. Cover the lid and beat the walnuts into fine pieces and set aside.
3. Pour sunflower oil and sugar into a bowl and beat evenly, then add an egg and beat until thick.
4. Pour in the chopped walnuts and mix well.
5. Add flour and baking soda. Be sure not to add too much baking soda, just 1 gram will do, otherwise the taste of the biscuits will be compromised.
6. Use a spatula to stir, pressing and stirring to fully combine the dry and wet ingredients.
7. Finally, mix into a smooth dough, cover with plastic wrap and let rest for a while.
8. Divide the large dough into small portions of 15 grams each, roll into small balls and place on the baking sheet.
9. Use the mooncake mold to press out the small dough ball into a patterned biscuit base. Press the handle firmly until it stops, so that the cookie pattern will be clear when you lift the mold.
10. Bake at 150 degrees for 10 minutes until the biscuits turn slightly yellow in color. Take them out and place them on the grill to dry until cool, then store them in a sealed jar.
