Step 1
Wash the chicken wings with clean water.Step 2
Make two diagonal cuts on the front and back of the chicken wings.Step 3
Cut the ginger into four large pieces and then shred it into strips.Step 4
Add shredded ginger to washed chicken wings.Step 5
Pour in 1 tablespoon cooking wine, 1 tablespoon light soy sauce, 1/2 tablespoon dark soy sauce, and 1/2 teaspoon salt.Step 6
Mix well and marinate for 20 minutes.Step 7
Pour enough water into the pot, put the chicken wings and shredded ginger in cold water and turn on the heat.Step 8
Bring to a boil and remove the chicken wings.Step 9
The chicken wings must be drained out of water, otherwise the oil will easily splash when frying.Step 10
Take another pot and pour an appropriate amount of oil into the pot. The amount of oil depends on the number of chicken wings. If you make too much, pour more oil. After the oil is hot, add a star anise and a pinch of Sichuan peppercorns to the pot.Step 11
Put the marinated chicken wings into the pot one by one and spread them flat.Step 12
Fry over medium heat until both sides are golden brown.Step 13
Pour in 1 tablespoon light soy sauce, 1 tablespoon cooking wine, and 1/2 tablespoon dark soy sauce.Step 14
Stir-fry until chicken wings are evenly colored.Step 15
Then pour in 350 ml of Coke. It's almost like a can of Coke. If you make more chicken wings, the amount of Coke you pour in will increase accordingly.Step 16
Bring to a boil over high heat.Step 17
Cover the pot, turn to medium-low heat and simmer for 10 minutes.Step 18
After simmering, turn to high heat and start to collect the juice. Stir occasionally to avoid scorching the pot. When the juice is almost reduced, taste the saltiness. If you feel it is too sweet or bland, you can add a little salt to taste. I usually add 1/2 teaspoon of salt.Step 19
Don't make the soup too dry, leaving a little bit to serve with rice is really delicious!Step 20
If you want to serve it to guests, you can garnish it with a little white sesame seeds after serving. It doesn’t matter if you eat it yourself.
