Improved version of West Lake Beef Soup
Ingredients
- Beef Tenderloin 150g
- Northern Tofu 100g
- Agaric 20g
- Carrot Half
- Cilantro 1 plant
- Onion (small) 1 piece
- Eggs 1
- Corn starch (juice) 5 grams
- Cornstarch (cured beef) 2 grams
- Oyster sauce 1 spoon
- Cooking wine 1 spoon
- Refined salt 4 grams
Steps
1. Prepare ingredients
2. Cut the beef, onions, carrots, fungus, and tofu into small cubes, remove the coriander leaves, and cut the coriander stems into small pieces
3. Separate the egg whites and yolks. Only egg whites are used for this dish
4. Beat the egg whites and set aside
5. Put cornstarch into a bowl
6. Add 60ml cold water to make water starch
7. Add 2 grams of cornstarch to the beef cubes
8. Add 1 tsp oyster sauce
9. Add 1 spoonful of cooking wine
10. Mix thoroughly and marinate for 5 minutes
11. Add cold water to the pot
12. After the water boils, add the tofu and blanch it for 2 minutes
13. Take out the blanched tofu
14. Heat the wok and add corn oil
15. After the oil is hot, add beef cubes
16. Stir fry for 2 minutes

24. After boiling, continue to cook for 10 minutes
