Italian breakfast baked eggs
Ingredients
- Eggs 1
- Tomato 2 pieces
- Onion 60g
- Garlic 1 clove
- Butter 10g
- Grated coriander/parsley A little
Steps
1. Make a cross on the top of the tomato, blanch it in boiling water for 1 minute
2. Remove from cold water and tear off the skin
3. Cut the tomatoes into pieces and set aside
4. Chop onions and set aside
5. Cut a clove of garlic into minced garlic
6. Heat a small piece of butter in the pot until it melts
7. Add onions and stir-fry
8. After frying until fragrant, add minced garlic and fry together
9. Sauté until the onions are transparent and add chopped tomatoes
10. After the onions are soft, add the chopped tomatoes and sauté over low heat. After the tomatoes are juiced, add a spoonful of tomato paste
11. Fry the tomatoes into puree, add salt and black pepper to taste and serve
12. Spread the fried tomato puree in a baking bowl and use a spoon to make a pit
13. Break an egg into the depression
14. Sprinkle mozzarella cheese around the eggs and bake in the oven at 200 degrees for 8 minutes
15. You can sprinkle chopped parsley or coriander on the surface of the baked eggs for decoration, and then dip them in bread to eat
