Lazy Liangpi
Ingredients
- Batter:
- High-precision flour 150g
- Salt 2 grams
- Water 300 grams
- Side dishes:
- Mung bean sprouts A few
- Shredded carrots A little
- Cucumber shreds A little
- Sauce:
- Salt + vinegar + soy sauce + oil chili Dosage (in the recipe)
- Seasoning water:
- Grass fruit + Daxiang + Fennel + Sichuan pepper + cinnamon + bay leaf Dosage (in the recipe) span>
- Tools:
- Liangpi gong (7 inches 23cm)
- Or pizza plate (8 inches)
Steps
1. Weigh the flour!
2. Add water!
3. Add salt!
4. Stir with a whisk!
5. Mixed batter!
6. Pour some oil on the dough or pizza pan!
7. Use the cucumber stem to spread evenly! (Saves on washing brushes)
8. Pour in 110 grams of batter!
9. Cover the gong noodles with batter and place them in a pot of boiling water.
10. Cover the pot and steam over high heat for three minutes!
11. Open the lid of the pot and see big bulges, which means the dough is steamed!
12. If placed in a basin of cold water, it will float on the water.Go ahead and cool down quickly!
13. After cooling, uncover the dough!
14. Place upside down on a clean chopping board!
15. Brush some oil on the dough, and then tuck the second piece.
16. Fold it and cut into strips!
17. Prepared side dishes!
18. Boil the seasoning water and let it cool for use! (5 fragrant leaves + 1 daxiang + 1 grass fruit + 2 grams of fennel + 2 grams of cinnamon + 20 peppercorns)
19. Make the sauce! (Small tablespoons shall prevail: 2/3 spoon of soy sauce + 1 spoon of vinegar + 8 spoons of seasoning water + 2 spoons of red pepper oil + 1 gram of salt)
20. Pour it on the dough and it’s ready to eat!
