Pineapple Chicken
Pineapple Half | Chicken Legs 1 catty |

Step 1
Peel the fresh pineapple and cut into cubes of any size. I usually cut half into large pieces (for easier eating) and half into smaller pieces (to increase the pineapple flavor of the soup).Step 2
Remove the bones from the chicken thighs and cut them into cubes. Marinate them with salt and cooking wine for ten minutes. (You don’t have to use chicken thighs, and you don’t have to remove the bones. If you don’t remove the bones, just chop them into pieces.)Step 3
Open the oil pan, sauté the ginger slices until fragrant, add the chicken and stir-fry.Step 4
If you like it more fragrant, you can turn up the heat a little, fry the chicken until golden brown, and add a bottle of white wine. If you like it more tender, you can add wine when the chicken changes color slightly. (I used white wine for wine. If you don’t have it, you can skip it or just add cooking wine~)Step 5
Pour in the pineapple, stir-fry, reduce to medium-low heat, and simmer for about ten minutes (be careful not to burn the pot dry, turn it over after a while. (I forgot to take pictures of this step, :P)Step 6
When the juice is almost reduced, you can season it. Add the sugar and salt directly to the pot and stir-fry. If the mixture is not correct, taste it while seasoning. In addition, take a small bowl, add about two tablespoons of light soy sauce, about one tablespoon of dark soy sauce, an appropriate amount of oyster sauce, a tablespoon of cornstarch, and add an appropriate amount of water to make a gravy. (The seasoning can be increased or decreased according to personal preference ~ Also note that the cornstarch and water must be mixed well, otherwise it will easily clump after being put into the pot)Step 7
To thicken the sauce, pour the mixed sauce into the pot, stir-fry quickly and mix well. (If it feels too thick, you can add a little water and cook it for a while.) Taste the taste and make final adjustments according to your own taste. You can simmer it for a while longer to make the chicken more flavorful.Step 8
