Steps
1. Prepare ingredients!
2. Sift all-purpose flour!
3. Make oil dough: add fine sugar, salt, warm water, and lard to the flour in sequence [I am lazy, haha, I used bread machine to knead the dough]
4. Start the dough kneading function of the bread machine [30 minutes to complete]
5. Wrap the kneaded dough in plastic wrap and let it rest for 30 minutes
6. Make puff pastry: Add butter and lard to low-gluten flour in proportion, and knead until the dough is not sticky to your hands or to the bowl
7. The pastry is kneaded! Wrap in plastic wrap and let it rest for 30 minutes
8. Soak the egg yolks in corn oil. I soaked them overnight, which will have a better effect of removing the fishy smell! (Because I am a mother and want to feed my baby, I soak it in corn oil. If adults eat it, I can directly spray high-strength white wine on the egg yolk and then bake it in the oven for 5 minutes)
9. Bake in the oven at 120 degrees for 5 minutes and take it out!
10. Divide the bean paste into 8 equal portions according to 35g each
11. Put the roasted egg yolks in the bean paste, wrap it up and close it, a total of 8 pieces for later use!
12. The ratio of 25g each of oil crust and 15g each of pastry, divided into 16 portions in total
13. Place the pastry in the middle of the pastry and start wrapping
