Pumpkin and Potato Soup
Pumpkin 1 block (800g) | Potato 2 pieces (500g) |
Star anise 2 | Garlic 3 petals |
Scallions 3 pieces | Light soy sauce 2 tablespoons |

Step 1
Peel and seed the pumpkin, wash and cut into large pieces.Step 2
Peel the potatoes and cut into large chunks.Step 3
2 star anise, sliced garlic. Wash and mince green onions.Step 4
Heat the pan with cold oil, sauté the star anise and garlic slices over low heat until fragrant.Step 5
Add pumpkin cubes and potato cubes and stir-fry over medium heat.Step 6
Fry until slightly soft, add 2 tablespoons of light soy sauce and appropriate amount of salt.Step 7
When the stir-fry reaches the level as shown in the picture, pour in just enough water to cover the pumpkin and potatoes, cover the pot and cook over high heat.Step 8
After the water boils, taste it for saltiness, cover the pot, adjust the heat to medium and continue cooking.Step 9
Cook until the pumpkin and potatoes are soft and the soup is thick, then turn off the heat and sprinkle in the chopped green onion.Step 10
