Sheep and Scorpion
Ingredients

Steps
1. Clean the sheep and scorpions, boil them in boiling water for 5 to 10 minutes, pick them up, wash them and set aside (discard the water used to cook the sheep and scorpions)
2. Prepare all the seasonings, slice the two types of ginger separately, cut the green onion into sections, and pat the garlic a little
3. Add oil to the wok and sauté: ginger slices, green onion segments, dried peppercorns, cumin, cumin, bay leaves, cinnamon, dried chili pepper, white peppercorns, garlic, Alpinia
4. Then add the processed sheep and scorpions and stir-fry for a while
5. Then pour the fried lamb scorpions and all spices into the electric pressure cooker
6. Add rock sugar, light soy sauce, dark soy sauce, cooking wine and appropriate amount of boiling water
7. Choose the appropriate program according to the function of your electric pressure cooker to simmer the sheep and scorpions (if you don’t use an electric pressure cooker, use a large pot, boil the water and simmer for 1 and a half It’s about an hour or so)
8. Finally taste it, season with salt and sprinkle with coriander

- Galangal (I couldn’t buy the dried kind, so I used fresh galangal instead)
