Steps
1. A photo of the ingredients: two small pieces of pork ribs (I have asked Aunt Shuanghui to cut them into small pieces for me), a large piece of winter melon, a small piece of ginger, three cloves of garlic, and a section of green onions. Five dried chili peppers (you can omit it if you don’t like spicy food), two small star anise, a small piece of cinnamon, and a little Sichuan peppercorns
2. Wash the spices, control the water and set aside. Peel the ginger, peel the garlic, clean and slice, and cut the green onion into diagonal sections
3. Peel, wash and cut the winter melon into evenly sized pieces
4. Pour an appropriate amount of water into the pot, add the ribs, boil the water and skim off the blood, then take out the ribs
5. Wash the pork ribs to remove the blood and control the water for later use
6. Heat the wok to medium-low heat and stir-fry the water on the surface of the ribs. I ran out of kitchen paper towels and I am afraid that water on the surface of the ribs will splash when oil comes into contact, so there is no oil in the pot. Stir-fry the water first.
7. Add the washed spices: star anise, cinnamon, dried chili pepper, and stir-fry the water in the same way
8. Add appropriate amount of cooking oil,
9. Stir-fry the pork ribs until the surface begins to turn brown
10. Add ginger and garlic and stir-fry
11. Pour in a spoonful of cooking wine and stir-fry to remove the smell
12. Add a spoonful of Pixian bean paste, if you are afraid of spicy food, you can omit it
13. Add appropriate amount of hot water, adjust the amount of water according to personal preference, at least cover the ribs
14. Use one spoon of light soy sauce, one spoon of oyster sauce, and one spoon of dark soy sauce to make a sauce. Of course, you can also add it directly to the pot
15. Pour the sauce into the pot
16. Bring to a boil over high heat, add three or four rock sugar and stir to dissolve
17. Transfer to a large clay pot. If you don’t have a clay pot, you can also use your own wok or other soup pot. I think the clay pot or cast iron pot will make the stew more fragrant. After boiling, turn down the heat. Simmer
18. Add winter melon
19. After boiling, simmer on low heat for 10 minutes. The length of stewing time for the ribs and winter melon can be adjusted according to your favorite taste
20. Finally, reduce the sauce over high heat to your liking. I leave more soup. I like to use the soup to soak rice. Transfer it to a hot clay pot and sprinkle with a few bay leaves. , ready to serve
