Remove the yellow leaves from spinach, remove the roots, and clean them. Also choose to wash the coriander.Step 2
Put an appropriate amount of water in the pot, boil it, add the enoki mushrooms and blanch them, take them out and let them cool. The weather is cold in winter, so use warm boiled water to cool down, do not use tap water or cold water.Step 3
No need to pour out the water used to blanch the enoki mushrooms. Add the spinach and blanch it for about 2 minutes until cooked. And it helps remove oxalic acid from spinach.Step 4

Put an appropriate amount of oil in the pot, put peanuts in the cold oil in the pot, fry until the peanuts change color, then take them out and set aside.Step 6
Put oil in the pot, heat the oil and add peppercorns and stir-fry until fragrant. Strain out the peppercorns, leaving only the peppercorn oil. Cut the spinach, coriander, and enoki mushrooms into sections, put them in a basin, add light soy sauce, vinegar, white sugar, and pepper oil and mix well.Step 7
