Stir-fried scissor noodles with tomatoes and beef
Ingredients
- Flour 200g
- Salt in dough 2 g
- Alkali 0.2 g
- Minced beef 200g
- Cauliflower 300g
- Tomatoes Two
- Garlic Two cloves
- Scallions 1 root
- Ginger 5 grams
- Salt Appropriate amount
- Sugar 2 grams
- Black pepper A little
- Soy sauce 2 teaspoons
- Rice wine 1 tablespoon
Steps
1. 1. Add 200g of flour, 2g of salt and 0.2g of alkali and mix well (using a little salt and alkali can make the dough better), Then pour 100 grams of cold water and knead into a harder dough without dry flour., let stand for 10 minutes.
2. 2. Knead the dough for another 1-2 minutes, it will be smoother, and let it sit for another 20 minutes.
3. 3. Knead the dough for another 1 minute. It will be very smooth and the dough is ready. Let it wake up for another hour or so to make the dough softer and more elastic.
4. 4. The dough is ready, let’s prepare the toppings. Chop the beef into small pieces, cut the cauliflower into florets, cut the tomatoes and green peppers into cubes, shred the ginger, slice the garlic, and cut the shallots into flowers.
5. 5. Next, boil half a pot of water, then reduce the heat to low. Hold the risen dough in one hand and scissors in the other hand. Turn the scissors against the dough and cut. Cut directly into the hot water pot and you will find that each one looks like a small fish. Note: Do not let the water boil during the entire frying process.
6. 6. After all the dough is fried, turn up the heat and cook until all the fish noodles are cooked, add a little water and boil again.
7. 7. Then scoop the cooked noodle fish into cold boiled water and set aside. This makes it taste refreshing and chewy, not sticky.
8. 8. Now let’s cook. Heat oil in a pan and stir-fry green pepper, onion, ginger, garlic and minced beef.
9. 9. After the beef changes color, add salt, sugar, black pepper, soy sauce and rice wine to taste, stir-fry evenly and set aside.
10. 10. In another pan, add tomatoes and stir-fry until soft, then add cauliflower and stir-fry.
11. 11. Stir-fry the cauliflower until it is cooked and add salt to taste. Note: If the pot is too dry at this time, you can pour some noodle soup.
12. 12. Then take out the scissor noodles from "Process 7" and pour them into the wok.
13. 13. Pour the fried minced beef in "Process 9" onto the scissor noodles.
14. 14. Stir everything together, pour some sesame oil into the pot and enjoy.
15. 15. Yoyo, the noodles are chewy and smooth, and the toppings are delicious and rich!
Tips
- 1. The hygroscopicity of flour is different, the amount of water here is only for reference. Hold the scissors until the dough is firm.
- 2. After kneading and waking the dough for three times, it will become smooth, soft and elastic without any effort.
- 3. Do not let the water boil during the entire frying process. After frying, turn on the high heat and cook it so that the fish is evenly heated.
- 4. The choice of toppings is optional.
