Sautéed Eggplant
Ingredients
- Eggplant 3 items
- Onion Half
- Chives 1 root
- Pork 50g
- Rapeseed oil 50g
- Salt 1 small teaspoon
- Light soy sauce 1 spoon
- White vinegar 1 small spoon
- Fresh Vegetables 1 small spoon
- Doubanjiang 1 spoon
- Chili oil 1 spoon
- Marinated minced meat materials:
- Cooking wine Appropriate amount
- Light soy sauce Appropriate amount
- Cornstarch 1 tsp
Steps
1. Prepare the ingredients, forget the chives
2. Wash the pork and chop it into mince, add appropriate amount of cooking wine, light soy sauce and corn starch, mix well and marinate for five minutes
3. Wash the eggplant, cut it into pieces, and soak in water to prevent oxidation
4. Wash the onions and cut them into sections
5. Wash the scallions and cut into rings and set aside
6. Pour rapeseed oil into the pot
7. Heat until slightly smoking
8. Add onions and saute until fragrant
9. Add minced meat
10. Stir fry for a while until it changes color
11. Doubanjiang
12. Stir-fry the chili oil evenly
13. Add eggplant
14. Stir fry for a while and add appropriate amount of salt
15. Cook light soy sauce
16. Add 1 teaspoon of white vinegar (purely a personal preference) and stir-fry until cooked
17. Add 1 tsp of fresh vegetables
18. Sprinkle with chopped green onion
19. Stir well and serve

Tips
- 1. Soak the eggplant in water to prevent oxidation
- 2. Adding white vinegar is purely a personal preference, it tastes really good!
