Dandan noodles
Ingredients
- Noodles 120g
- Spinach 5 pieces
- Garlic 1 clove
- Chives 2 roots
- Extremely fresh soy sauce 5g
- Age vinegar 2g
- Spicy oil 2 spoons
- Pepper powder A little
- Bean sprouts and meat sauce Appropriate amount
Steps
1. First make the bean sprouts and meat dumplings: Pour an appropriate amount of oil into the pot, add 800g of minced meat, and stir-fry over medium-low heat
2. When the minced meat turns white, add 10g cooking wine, 10g chopped green onion, and 10g minced ginger, and continue to stir-fry
3. Fry the minced meat until the water is dry. When the oil is spit out, add 200g of broken rice sprouts and continue to stir-fry for 2 minutes.
4. Add 10g light soy sauce, 10g dark soy sauce and 3g sugar, stir well and serve.
5. Put it into a clean bowl and set aside (this is a must-have ingredient for making dandan noodles)
6. Wash the spinach and set aside
7. Prepare chopped green onions and minced garlic
8. Put the very fresh soy sauce, aged vinegar and Sichuan peppercorns into the bowl
9. Add 2 tablespoons of spicy oil (add according to your preference)
10. Pour in half a bowl of boiling water (it’s better to have stock)
11. After the water in the pot boils, add the noodles. When the pot boils again, add the spinach and cook until it is cooked through. Then turn off the heat.
12. Pick the cooked noodles and spinach into a seasoning bowl, scoop out two spoons of the bean sprouts and meat sauce made before, sprinkle some chopped green onion, and mix well when eating
Tips
- 1. The noodles and seasonings are enough for one person
