Mapo Eggplant
Ingredients
- Eggplant 2 pieces
- Pork stuffing 100g
- Sanshengchuan Mapo Tofu Sauce 2 small spoons
- Ginger 1 piece
- Garlic 2 cloves
- Scallions 2 roots
- Starch 2 tablespoons
- Water starch 2 tablespoons
- Chili powder 1 tsp
- Pepper powder 1 small spoon
- White sugar 1/2 tsp
- Chicken Essence 1/2 tsp
- Soy sauce 1 small spoon
- Edible salt 1 tsp
- Vegetable oil
Steps
1. Chop green onions;
2. Chop ginger and garlic;
3. Cut the eggplant into hob pieces;
4. Sprinkle 2 teaspoons of dry starch on the eggplant and mix well;
5. Put a tablespoon of oil in the pot. After the oil is hot, add the eggplant pieces coated with starch into the pot;
6. Slowly fry over low heat until cooked, set aside;
