Soy Sauce Chicken
Ingredients
- Three Yellow Chicken 1 piece (about 1 catties)
- Ginger 3-4 slices
- Onions 5-6 roots
- Steamed fish with soy sauce Half bowl (small rice bowl)
- Clear water 1 bowl
Steps
1. Wash the whole chicken and remove the internal organs, head and feet.
2. Place ginger slices and green onion segments on the bottom of the pot
3. Put the whole chicken into the pot, add steamed fish soy sauce and water
4. Cover and bring to a boil over medium heat
5. Flip the chicken every few minutes so that all parts of the chicken body are colored and flavorful, and cook for 20 minutes.
6. When the chicken body turns into dark brown color, cover and cook over low heat for 5 minutes, remove from heat and immerse until warm, then remove.
7. Spread a layer of maltose on the surface of the whole chicken and let it rest.
8. Cut the chicken into pieces. The soy sauce in the pot can be used as a dipping sauce or poured directly on the chicken pieces and served.
Tips
- It is recommended to save the chicken offal for another use. The chicken feet can be cooked in the same pot and become soy sauce chicken feet. In fact, you can also buy chicken feet and wings boiled in soy sauce separately.
- The ratio of soy sauce to water is about 1:2, but it depends on the saltiness of the soy sauce. You can try the taste after mixing it. The juice is saltier than usual when cooking.
- The soaking time can be flexibly controlled. If the chicken is larger, you can add a few minutes as appropriate.
- To make soy sauce chicken, it is best to use a pot with good heat preservation performance, such as a casserole, cast iron pot, or stone pot.
- The remaining soup from cooking chicken is very delicious chicken soy sauce, which can be used in place of soy sauce in other dishes, so don’t waste it.
- If you don’t have soy sauce, you can use light soy sauce and sugar instead of soy sauce. It’s about 1 bowl of light soy sauce, 1 spoon of sugar and 2 bowls of water.
- Spreading maltose on the surface of the chicken is to add color and enhance the texture of the skin. You can omit this step if you don't have maltose.
