Step 1
Beat the egg yolks, add sugar and honey, and beat over hot water until the color turns white, the volume expands, and becomes thick.Step 2
Add sugar to the refrigerated egg whites in three batches and beat until neutral and dry.Step 3
Mix egg yolk paste and meringue.Step 4
Sift in the low-gluten flour and mix evenly with a spatula until there is no dry flour left.Step 5
Heat the milk and butter in water in advance to keep them warm. The temperature is maintained at 50-60 degrees. If it is corn oil, keep the temperature at 30-40 degrees to avoid defoaming of the batter after adding it.Step 6
Fold in the warm milk and butter mixture with a spatula and mix well.Step 7
Squeeze it into the paper cup mold and fill the mold for 4-5 minutes first.Step 8
Squeeze some caramel sea salt chestnut sauce, then cover the remaining batter on top, filling it about 8 minutes full.Step 9
Shake the mold lightly, place in the middle rack of the preheated oven, 150 degrees, and bake for 25-30 minutes.Step 10
Decorate. Heat 20g of light cream until boiling, remove from heat, add 20g of white chocolate, stir evenly, add 2g of matcha powder, stir evenly, let cool and add to the whipped cream. Use a piping tip to pipe into a Christmas tree. I didn’t have any sugar beads, so I just sprinkled them with shredded coconut and used them as snowflakes, which was pretty good too.Step 11
