Braised chicken nuggets
Ingredients
- Chicken legs 280g
- Chestnut 180g
- Ginger 15g
- Garlic 10g
- Light soy sauce 20g
- Dark soy sauce 5 grams
- Cooking wine 10g
- Tomato sauce 20g
- Salt 5 grams
Steps
1. Chop the chicken legs into small pieces, clean them, drain them and set aside
2. Cut fresh chestnuts into small slits, boil them in a pot of boiling water for a minute or two, then cool and remove the shells
3. Blanch the chicken leg pieces in cold water in a pot
4. When the water boils, remove the bloody foam and fish it out
5. Clean again, control water and set aside
6. Heat the pan with cold oil, add ginger and garlic and stir-fry until fragrant
7. Add the blanched chicken nuggets
8. Stir-fry over low heat, add tomato sauce and cooking wine
9. Add light soy sauce and dark soy sauce and stir well
10. Fry until the surface is charred and the tomato sauce melts and sticks to the chicken pieces
11. Add boiling water to cover the chicken pieces
12. Add peeled chestnuts
13. Add three rock candies
14. Add a small spoonful of salt
15. Cover the pot and cook for 15 minutes
16. Remove the juice over high heat

Tips
- ①Chicken nuggets must be blanched cleanly. The cleaner they are, the less hormones they will produce
