Steps
1. Choose small potatoes. New potatoes that have just grown in spring are better.
2. Wash the potatoes, peel them and cut them into small pieces, which will make them easier to taste.
3. After heating the pan, add an appropriate amount of oil. Generally, if potatoes do not need oil, you can add less oil than when cooking. Add potatoes and stir-fry until translucent.
4. Then add sugar, depending on personal preference, I like to add more. Add dark soy sauce and taste. If it's too light, add a little salt. (Note that sugar must be added first before dark soy sauce so that the potatoes can color easily)
5. Stir-fry the potatoes until they feel burnt before adding water. (The water should cover the potatoes)
6. When the potatoes are cooked, add MSG and reduce the juice over high heat
7. Form into a plate and sprinkle with chopped green onion.
