Carrot Short Rib Soup
Ingredients

Steps
1. Prepare ingredients: Today I saw that the carrots in the supermarket were very fresh, just in time to make soup, so I bought them.
2. Peel the carrots and cut off the tips and roots.
3. Wash the peeled carrots and cut into pieces with a hob.
4. Peel yam: (You can wear disposable gloves to peel to avoid the juice getting on your hands and itching.)
5. Wear disposable gloves to wash the yam and cut it into pieces with a hob.
6. After washing the ribs, blanch them in cold water. Bring to a boil over high heat, then remove and rinse repeatedly with cold water to clean the impurities on the ribs and set aside.
7. Place the chopped carrots and yams on a plate and set aside.
8. The blanched pork ribs are very clean after rinsing.

10. Add water to the casserole, pour the seasonings into the pot, onion, ginger, garlic, star anise, cinnamon, and rock sugar.
11. Put the ribs into the casserole with your hands.
12. Add cooking wine, bring to a boil over high heat, then turn to low heat and simmer for 25 minutes.
13. After 25 minutes, add the chopped yam and carrots, bring to a boil again, turn to low heat and simmer for 15 minutes.
14. After 15 minutes, the delicious soup is ready! Season the pot and it will be fragrant~

Tips
- The ribs must be blanched first, then rinsed with cold water before making the soup. You can also add some corn to the soup.
- If you don’t like the star anise and cinnamon, you can leave them out.
