Chicken Legs Stewed with Mushrooms
Ingredients
- Chicken legs 3 pieces
- Shiitake mushrooms 25g
- Sweet potato vermicelli 100g
- Potato 1
- Light soy sauce 2 spoons
- Cooking wine 1 spoon
- Dark soy sauce 1 spoon
- Onion 1 item
- Ginger 2 slices
- Red pepper Appropriate amount
- Anise 1 piece
- Clear water Appropriate amount
- Garlic 2 pieces
- Salt Appropriate amount
- Oil Appropriate amount
- Rock sugar Appropriate amount
Steps
1. Soak the mushrooms one night in advance
2. Wash the chicken and drain the water
3. Cut into pieces
4. Peel and cut potatoes into cubes
5. Peel and slice the ginger
6. Smash the garlic
7. Wash the green onions and cut them into sections
8. Heat oil in a cold pan and add chicken drumsticks
9. Fry until both sides are golden
10. Add green onion
11. Add ginger slices
12. Add garlic cloves
13. Add red pepper
14. Put in star anise
15. Add appropriate amount of rock sugar and stir-fry until fragrant
16. Add 2 spoons of light soy sauce
17. Add 1 spoonful of dark soy sauce
18. Add 1 spoonful of cooking wine
19. Stir-fry until evenly colored
20. Add appropriate amount of water to cover the ingredients in the pot, and bring to a boil
21. Add potato cubes
22. Add the soaked dried mushrooms and mushroom water
23. Cover the pot, bring to a boil over high heat, and simmer over medium-low heat for 20 minutes
