Cold Chicken Feet

Step 1
First boil a pot of water and let it cool (very important)Step 2
Wash the chicken feet, remove them and cut them in halfStep 3
After the water boils, add 2 star anise, 5 or 6 slices of ginger, 2 spoons of cooking wine (refer to picture 3 for spoons), 2 spoons of salt, and thenAdd the chicken feet, bring to a boil, then turn off the heat, cover the pot and cook for 20-30 minutesStep 4
I cooked it with an induction cooker, turned on 800, and cooked it for 25 minutes. To judge whether it is cooked or not, use chopsticks to insert it. If it can be inserted, it means it is cooked, and you can turn off the heat. Immediately after taking the pot out of the pot, pour cold water (cool and boil), preferably several times, until the chicken feet are cold.Step 5
Then process the ingredients and mince them all. The chili pepper depends on your personal taste. If you like spicy food, you can add more. Just use the head part of the green onion.Step 6
Chop everything up and put it into the pot. Add 3 tablespoons of mature vinegar, 5 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of oyster sauce, 1 tablespoon of sesame oil, and 1 tablespoon of salt (you can leave it out if you don’t have much). Test the taste and see if it suits you. When it tastes good, add chicken feet and mix well. (Except for salt, the spoons used for other seasonings are the porcelain spoons in Figure 3 above)Step 7
