Dice celery.Step 2
Dice the carrots as well.Step 3
Wash the peanuts and set aside.Step 4
Slice ginger, cut green onions, peel garlic, and prepare peppercorns, bay leaves, and star anise.Step 5
Pour an appropriate amount of water into the pot, add onions, ginger, garlic, peppercorns, star anise leaves and peanuts. Simmer over low heat for 30 minutes, remove the aniseed ingredients and scoop out the peanuts.Step 6
Take another small pot and pour appropriate amount of water into it.Step 7
After the water boils, add celery and carrots, blanch them until cooked, drain the water and take them out.Step 8
Put cooked peanuts, celery and carrots in a bowl.Step 9
Add oyster sauce, light soy sauce, salt, sesame oil, white sesame seeds, and chili oil. Stir evenly and eat. Cooking Tips for Cold Sanding
