Cold Silver Mushrooms
Ingredients
- Enoki mushroom/Silver mushroom 400g
- Garlic 5 cloves
- Chili 2 pieces
- Onion 1 root
- Cilantro 1 plant
- Light soy sauce 4 spoons
- Vinegar 1 spoon
- White sugar half a spoonful
- Salt 2g
- Sesame oil/Sichuan peppercorn oil 1 spoon
- Chili pepper 1 tablespoon
- Edible oil 20g
Steps
1. Prepare the ingredients as shown in the picture. I have acne recently, so I use Erjingtiao, which is not so spicy. I need more garlic. It is delicious. 1 garlic is just right.
2. Cut off the head and tear it open, wash it twice and drain
3. Cut the garlic into mince, cut the pepper into rings, and mince the onion and coriander
4. Boil water in a pot. After the water boils, add the needle mushrooms and blanch them for 3 to 5 minutes. Personally, I think 3 minutes is just right
5. After cooking, remove and control the water
6. Add minced garlic, chili pepper rings, and dried Sichuan peppercorns
7. Pour a spoonful of hot oil to bring out the garlic aroma and spiciness
8. Add salt
9. About 3g of sugar
10. Pepper sesame oil or pepper oil
11. Light soy sauce or very fresh soy sauce
12. A little balsamic vinegar
13. Chop green onions and coriander and mix well (because we need to give some non-spicy ones to the baby, add the chili oil after)
14. 1 tablespoon chili oil and mix well
15. Serve on a plate. The finished product is quite good. The colors are much brighter when taking photos in a different place
Tips
- I personally recommend buying silver needle mushrooms, which taste better than enoki mushrooms.
- Don't blanch it for too long, otherwise your teeth will be stuffed after 5 minutes
- You can season it according to your own taste, or you can add cucumber shreds and mix together
- Put more minced garlic. If you have a heavy flavor, add millet pepper. It will taste spicy
