Dragon fruit gradient cake (baby food supplement)
Ingredients
- Chiffon Cake
- Egg One
- Salad oil 5g
- Water (can be replaced with formula milk) 14g
- Low gluten flour 19g
- Decoration
- Yam puree 85g
- Dragon fruit
- Blueberry
Steps
1. Make the cake body first. The following is a 4-inch small cake. Preheat the oven before starting, and set the upper and lower tubes to 120 degrees Celsius
2. Put 5g of salad oil in a clean, oil-free and water-free bowl
3. Add 14g of water, or you can replace it with yogurt or mixed formula milk, and stir evenly to mix the water and oil
4. 19g low-gluten flour, sift into a bowl
5. Use a straight stroke to mix evenly. Be careful to use gentle and quick movements to mix evenly. Do not overmix.
6. Take an egg, separate the egg white and yolk, put the egg yolk into the batter, and put the egg white into another water-free and oil-free bowl
7. Continue to mix in a straight stroke. The egg yolk paste made by the back-egg method is very delicate
8. Next, start to beat the egg whites. Since there is no sugar, the beating state of the egg whites will be different. Pay attention not to over-beat. When you lift the whisk head and a small tip like this appears, it means that it has been beaten. Dry foaming state.
9. When mixing egg whites and egg yolk paste, first scoop one-third of the egg whites into the egg yolk paste, use a spatula to quickly mix evenly, then pour into the remaining egg whites and mix evenly. Since there is no sugar, defoaming is easier, so be sure to pay attention to your technique. You can send me a private message for the video.
10. The mixed cake batter is very fine. Pour it from a height of about 15cm away from the mold, and then shake it a few times on the countertop lined with a rag to release large bubbles.
12. Still due to the lack of sugar, the surface of the chiffon cake is more uneven, but it does not affect the subsequent operations. The baked cake is taken out and turned upside down to cool
13. The cooling rack at home was too big, and I couldn’t find a suitable tool to turn it upside down. Later I found that it worked just fine to put it upside down and put in a mesh sieve! Witty
