Enoki Mushroom and Tofu Soup
Ingredients
- Enoki mushroom 100g
- Tofu 1 piece
- Tomato 1
- Garlic 2 cloves
- Onions 2 pcs
- Light soy sauce 1 spoon
- Salt 1 tsp
Steps
1. Prepare the materials
2. Cut the tofu into small pieces
3. Cut off the roots of the enoki mushrooms
4. Tear it apart, clean it, and set aside for later use
5. Peel the tomatoes, or blanch them in boiling water and tear off the skin
6. Cut into small pieces
7. Chop the garlic and white and green scallions separately
8. Heat oil in a pot and sauté minced garlic and green onion
9. Add tomatoes
10. Stir-fry until the tomatoes are soft and juicy
11. Pour in appropriate amount of water
12. Add tofu cubes
13. Bring to a boil and continue cooking for about 5 minutes
14. Add the enoki mushrooms and cook until soft
15. Add a spoonful of light soy sauce
16. Add a little salt
17. Mix well
18. Finally, sprinkle some chopped green onion
