How to make fennel and pork dumplings

Step 1

Stir the flour into the dough with water, cover it and let it rise for two hours

Step 2

Pork stewed into stuffing or minced in a food processor into stuffing

Step 3

Pick off the old leaves and stems of fennel, wash and drain, chop into pieces and set aside.

Step 4

Add cooking wine, green onion, ginger, pepper, light soy sauce, olive oil, salt, and allspice to the meat filling. Stir vigorously in one direction. This step is very important, otherwise the fennel filling will not stick together.

Step 5

Add the chopped fennel and continue to stir in the same direction.

Step 6

Take out the dough and knead it smooth, hollow out the middle, knead the dough thinly with both hands as shown in the picture, then cut it into sections from the middle, lay it flat on the chopping board and knead it into long strips of even thickness.

Step 7

Use a knife to cut the dough into approximately the same size, sprinkle some flour on it, coat all sides of the dough with flour, then flatten it, turn it in circles with your left hand, and roll it out with your right hand.

Step 8

Align the middle and pinch, then hold the dumpling with both hands and close it into shape. Just enough to wrap the dough and not leave any sink.

Step 9

Boil the water and add the dumplings to the pot. After 3 o'clock of water, the dumplings will be ready.

Step 10

There is no filling missing at all. The skin is thin and the filling is big. With the sauce, you can take one bite and it is so delicious. Tips for cooking fennel and pork dumplings

1. If the dough is well cooked, you can actually wrap it. For the taste and texture, it is better to wake it up for a while, an hour or two is fine. 2. If you have leftover noodles, you can make dough sheets or pancakes; if you have leftover fillings, you can make meatballs or make a little more dough.
