Freeze-dried strawberry yogurt mousse
Ingredients
- Thick yogurt 250g
- Freeze-dried strawberry slices 15g
- Whip cream 200g
- Digestive biscuits 90g
- Gelatin powder 15g
- Butter 50g
- Fine sugar 40g
- Strawberry Appropriate amount

Steps
1. Melt butter into liquid by insulating water
2. Soak the gelatine powder in water until soft, then melt it into liquid by insulating water
3. Freeze-dried strawberry slices rolled into powder
4. Put the digestive biscuits into a bag and roll them into pieces with a rolling pin
5. Add butter and mix well
6. Put the mixed biscuit powder into a 6-inch removable bottom mold and compact it with your hands, then put it in the refrigerator for 1 hour
7. Pour the freeze-dried strawberry powder and gelatine water into the thick yogurt and mix well (leave a little of the freeze-dried powder for surface decoration)
8. Beat the light cream and sugar until 8 points (note: do not beat the light cream, just beat until the cream isThe texture will not disappear easily)
9. Pour the mixed yogurt paste into the light cream paste, stir well and set aside
10. Remove the stems of the strawberries and cut them in half from the middle. Take out the biscuit base that has been refrigerated in the refrigerator and arrange the strawberries properly

12. The mousse paste is relatively thick and not very flat after pouring it in. Gently knock the mold to flatten the surface, then put it in the refrigerator for more than 5 hours
13. Take out and use a hot towel to warm the outside of the cake mold for a while. Use your fingers to gently push up the loose bottom part to take it out. Finally, you can garnish the mousse cake with strawberries and sprinkle a little icing. Dry powder and icing sugar and you're done
14. Cut into pieces and serve
Tips
- 1: Find a teacup and place it upside down on the table.Place the removable bottom part on the teacup, lightly wipe the outside of the mousse cake with a hot towel, and then slowly push the cake out to remove it smoothly.
- 2: The water used to melt the gelatine powder is about five times that of the gelatine powder. You can also replace it with gelatine tablets.
