Fried crispy pork
Ingredients
- Pork belly 200g
- Flour 20g
- Starch 20g
Steps
1. Prepare pork belly, eggs, starch, and flour
2. Cut the pork into half-finger-long strips. The meat I chose is pork belly, but you can also use tenderloin
3. Season with soy sauce, cooking wine, sugar, salt, and pepper
4. Add onion, ginger, garlic, millet and pepper to remove the smell
5. Add an egg, add flour and starch to the meat strips, and continue to stir until completely uniform
6. The overall state is slightly thinner. If it is too dry, add a small amount of cooking oil to adjust.
7. Heat up the oil pan, wait until bubbles begin to appear at the bottom of the pan, turn to medium-low heat, fry in batches until golden in color, and remove
8. After all the frying is done, increase the oil temperature and fry again quickly to ensure that the crispy meat is crispy on the outside and tender on the inside.
9. Fry until golden brown, remove and drain
10. I like to fry and eat at the same time. If I can't finish it, let it cool and seal it in a sealed box to keep it fresh. Store it in the refrigerator and use it to cook hot pot the next time I want to eat it
11. The flavor of cumin is fully integrated with the flavor of meat, and there is less fat, so it doesn’t taste greasy at all.
12. The surface of the fried crispy pork is very crispy after being cooled slightly, and the meat is tender and delicious
13. Fried crispy pork is not limited to back meat, other tenderloins can be made
14. You can add more starch, so that the fried shell will be especially crispy.
15. Let’s try it
Tips
- 1. Adjust the flour according to the state of the batter, as long as the batter can hang on the meat strips;
- 2. It is best to use pork belly. I have family members who don’t like fatty meat, so I chose lean pork, but marinated meat is also Very tender~
- 3 If you fry a small amount at one time, it is recommended to use a small soup pot so that the temperature and oil volume are easy to control
- 4 Follow the same method to make spicy, five-spice, and salt-and-pepper flavored crispy pork
- 5 There must be no moisture in the oil pan before adding oil, otherwise oil will splash and burn easily
- 6 To judge whether the meat is cooked, you can check if there are fewer bubbles around it when frying, it means it is cooked
