Ginger and Scallion Noodles
Ingredients
- Noodles 1kg
- Chicken thigh 200g
- Ginger 6 slices
- Onion 3 roots
- Red pepper 1 piece
- Oil 5 spoons
- Soy sauce 2 spoons
- Shaoxing rice wine 1 spoon
- Cornstarch 1 spoon
- Light soy sauce 1 spoon
- Dark soy sauce 1 spoon
Steps
1. Cook the noodles
2. Remove and drain
3. Mix chicken with 1 tablespoon cornstarch, 1 tablespoon oil and 1 tablespoon soy sauce. Heat the pan over high heat, add 2 ladles, and stir-fry the chicken until opaque. Remove from pan and set aside.
4. Add 2 tablespoons more oil to the pot and add ginger slices. Fry for 1 minute.
5. Add green onion and red pepper.
6. Add noodles.
7. Add chicken, stir-fry, you can add a little hot water.
8. Mix thoroughly, add Shaoxing rice wine, light soy sauce, and dark soy sauce to taste.
9. Put the pot into bowls.
