Step 1
The ingredients are as shown in the picture, a bowl of rice, 4 egg yolks, and appropriate amount of chopped green onion. Just use the white part of the chopped green onion, so that it will be fragrant after frying but you won't be able to tell that the green onion is added.Step 2
EggPut the yellow in a larger bowl, add appropriate amount of salt and chopped green onion and stir well. The salt does not need to be added in one step, so you can add a little less and just make up for it later when cooking rice.Step 3
Pour in the rice and stir. So use a big bowl to hold the egg yolks, because you need to mix the rice directly in it.Step 4
Stir the rice and egg yolk until every grain of rice is coated with the egg yolk.Step 5
Add some oil to the pan and heat it up. You don’t need a lot of oil. There’s no reference in my pot and it feels like I’ve added a lot of oil, but I haven’t!Step 6
When the oil is hot, pour all the rice in. The oil temperature does not need to be very high.Step 7
