Ham and egg fried noodles
Ingredients

- Eggs 1
- Ham slices 2 slices

Steps

2. Make preparations first: prepare minced garlic, dried red pepper segments and chopped green onion;
3. Cut two ham slices into thin strips;
4. Beat the eggs one by one, pour them into the pan and fry them into egg pancakes;
5. Then cut the egg skin into thin strips;
6. Pour an appropriate amount of oil into the pot, add minced garlic and chili and stir-fry until fragrant;
7. Then add the green vegetables and stir-fry for a few times;
8. Add shredded ham and egg skin, add a little salt and stir-fry evenly;
9. Then add the noodles and stir-fry a few times quickly;
10. Add an appropriate amount of light soy sauce, dark soy sauce and a small spoonful of oyster sauce and continue to stir-fry evenly;
11. Finally, add an appropriate amount of pepper and stir-fry the chicken essence evenly; add a little vinegar and chopped green onion before serving.

Tips
- 1. You can add vegetables according to your personal preference, even without ham slices and bacon.
- 2. The noodles I bought are semi-cooked alkaline noodles at the market. You can choose other noodles. First blanch the noodles in boiling water until they are about 70% cooked, then remove them and rinse them with cold water and drain. You can add a little cooking oil and mix the drained noodles. This will make it less likely to stick to the pan when frying, and the texture will be stronger
