Step 1
Cut 150g of shiitake mushrooms into thick slices, three pieces of crispy tofu (about 200g) into cubes, 200g of duck gizzards into thick slices, 150g of kidney strips into thin slices, wash the blood, add a little light soy sauce, salt and sugar and marinate for half an hour in advance. For later use, 20g celery segments, 70g black fungus, 70g carrot slices, and 80g yam tablets are all leftover from hot pot.Step 2
Boil a large pot of water, add 5g of salt and 5g of cooking oil to the water. After the water boils, add celery segments, black fungus, carrot slices, and yam tablets. After the water boils again, remove these ingredients and set aside.Step 3
Pour the shiitake mushroom slices into the water, continue to cook for 2 minutes after the water boils, remove and set aside.Step 4
Pour the crispy tofu into the pot, remove from the water and set aside.Step 5
After removing the crispy tofu, add 20g of cooking wine to the pot, then put the marinated kidneys into the water and boil. After the water boils again, remove the kidneys and set aside.Step 6
Pour the duck gizzards into the pot as well. After the water boils, cook for one minute and set aside.Step 7
Add 20g cooking oil to the wok, heat it up and then pour in 80g red oil hot pot base and stir-fry.Step 8
After the base ingredients are fragrant, pour in 500g of stock, cook for one minute, scoop up the residue and discard, then add the blanched mushrooms and crispy tofu, and cook for one minute.Step 9
Then pour all the vegetables that have just been blanched into the pot and cook for one minute, then scoop them out and pour them into a large bowl.Step 10
Add 200g of tripe to the soup in the pot and cook for one minute.Step 11
